Crackers au sarrasin – Buckwheat crackers

Voilà bien longtemps ( 1 an !) que je n’avais pas publié de nouvelle recette. La motivation m’a fait défaut  car l’année scolaire 2018-2019 a été un peu spéciale pour notre famille, qui s’est retrouvée dispersée sur deux continents. Heureusement, depuis juillet, nous sommes tous réunis en France et apprécions de retrouver nos racines (tout particulièrement d’un point de vue gustatif).
Pour mon retour en France, ma maman m’a offert un Thermomix, je vais donc certainement publier des recettes utilisant mon beau jouet tout neuf !

Voici donc une recette de crackers sympa et sûrement meilleurs pour la santé que les “Tuc” et autres “Crackers Belin” (que j’ai pourtant retrouvés avec plaisir).

INGRÉDIENTS :

  • 55 g de farine de sarrasin
  • 70 g de farine de blé
  • 35 g d’huile d’olive
  • 55 g de lait
  • 1 càs d’herbes de Provence
  • 1 càs graines de sésame, lin ou pavot (facultatif)
  • fleur de sel

RÉALISATION:

La pâte:

Au Thermomix (mais facilement faisable à la main!)
Dans le bol du Thermomix , mettez les farines +  les herbes + les graines  et mixez 1 sec / Turbo.
Ajoutez le lait + l’huile d’olive et réglez 1 mn / fonction pétrin.
Sortez la pâte du bol, roulez-là en boule et laissez reposer 15 mn à température ambiante.

Sans Thermomix:
Dans un grand bol, mettez les farines + les herbes + les graines et mélangez soigneusement.
Ajoutez le lait + l’huile d’olive et mélangez à la cuiller en bois.
Versez la pâte sur le plan de travail, puis pétrissez à la main et faites-en une boule que vous laisserez reposer 15 mn à température ambiante.

La cuisson:

Préchauffez le four à 180°C/360F.
Etalez la pâte très finement avec un rouleau à patisserie, directement sur une feuille de papier sulfurisé (ou un tapis de cuisson en silicone).
Pré-découpez les crackers en carrés, rectangles ou losanges (idéalement avec une roulette crantée, sinon avec le dos d’un couteau). A la cuisson la pâte se rétractera et les crackers se sépareront naturellement les uns des autres.
Saupoudrez d’un peu de fleur de sel. Il faut avoir la main légère, j’en ai trop mis la première fois!
Mettez au four pour 10 min.
Laissez refroidir et attendez patiemment l’heure de l’apéro.


It’s been such a long time (one year !) since I published a new recipe. I lacked enthousiasm because the 2018-2019 school year was a special one for our family, which found itself scattered on two continents. Fortunately, we reunited in July in France and so far we enjoy rediscovering our roots (here I am mostly talking about cheese, bread, wine etc etc…).
As a welcome back present, my mom offered me a Thermomix (lucky me!), so I will most likely publish a few recipes using my beautiful new toy!

Today, I baked buckwheat crackers which are surely better for health than the classic French crackers that we nibble for the “apero”  (= cocktail hour). And they are so easy to prepare with my Thermomix (but you could also easily make them without any machine).

INGREDIENTS :

  • 55 g (or 1/3 cup + 1 Tbs) buckwheat flour
  • 70 g ( or 1/2 cup) flour
  • 35 g (or 3 small TbS) olive oil
  • 55 g ( or 3 large Tbs) milk
  • 1 Tbs herbs de Provence
  • sesame, flax or poppy seeds (optional)
  • sea salt (“fleur de sel”)

DIRECTIONS :

The dough:

With a Thermomix (but can be prepared without it!)
Place flours + herbs + seeds in TM bowl and mix 1 sec / Turbo.
Add milk + olive oil and knead / 1min.
Remove the dough from the TM, put it on your counter top, and form it into a ball. Let it rest for 15 min at room temperature.

Without Thermomix:
Place flours + herbs + seeds in a large bowl and mix thouroughly.
Add milk + olive oil and mix as well as you can with a wooden spoon.
Remove the dough from the bowl and place it on a lightly floured surface. Knead it gently and form it into a ball. Let it rest for 15 min at room temperature.

Shaping and baking the crackers:

Preheat the oven to 180°C/360F.
Roll the dough with a rolling pin on a sheet of parchment paper. You should roll the dough as thinly as possible! 
Pre-cut crackers into squares, rectangles or lozenges (ideally with a serrated caster, otherwise with the back of a knife). During the baking process,  the dough will retract itself and the crackers will separate from each other.
Sprinkle sparsely with a little “fleur de sel”.
Put it in the oven for 10 minutes.
Allow to cool and wait patiently until it’s time for drinks and nibbles!
