Tarte oignons, épinards, noisettes – Onions, spinach and hazelnut tart

Vendredi soir, nous étions invités par notre amie Sharon, pour un petit dîner sur sa terrasse avec vue sur le bayou. Un endroit enchanteur, on se croirait dans la forêt tropicale, alors que nous sommes en pleine ville, pas loin de la Interstate 10 (une des plus larges autoroutes urbaines des USA!).

J’avais proposé d’apporter une “quiche”, et comme souvent, j’ai fait avec ce qu’il y avait dans le fond de mon frigo et placard, en faisant quand même attention à ce que les saveurs puissent a priori se compléter harmonieusement. Et bien, tous les convives (  Laurent, Sharon et sa soeur Dodie, 90 ans, peintre et étonnante de modernité; elle venait de publier ce jour là son premier post sur Facebook !) ont apprécié et m’ont confirmé que la recette méritait d’être publiée.

Voici donc ma recette:
INGREDIENTS:
1 pâte à tarte à l’huile d’olive – cliquez ici
confiture d’oignon – cliquez ici
épinards (environ 1 sachet d’épinards frais)
une petite poignée de noisettes concassées
2-3 tranches de prosciutto (facultatif)
parmesan râpé (quantité selon votre goût!)
2 oeufs
1 càc de maïzena
15 cl de lait
huile d’olive
sel, poivre, muscade

INSTRUCTIONS:
Préchauffer le four à 200 C – 400F.
Dans une sauteuse, avec un peu d’huile d’olive, faites tomber les épinards, salez, poivrez, parfumez d’un peu de muscade râpée. (Vous devrez avoir suffisamment d’épinards cuits pour pouvoir couvrir généreusement le fond de tarte.)
Diluer la maïzena dans 2 CàS de lait. Dans un grand bol, battre les oeufs, ajouter la maïzena + lait, le reste du lait, le parmesan râpe, salez, poivrez. Mélangez bien et ajoutez les épinards cuits à cet appareil.
Etalez la pâte à tarte dans le moule à tarte. Percez le fond à la fourchette.
Tartinez une couche fine de confiture d’oignons sur le fond de tarte.
Disposez de petits morceaux de prosciutto sur la confiture d’oignon.
Etalez le mélange aux épinards sur la tarte.
Parsemez des morceaux de noisettes concassées (ne pas en mettre trop, le goût est puissant).
Enfournez pour environ 25-30 min.


Friday evening, we were invited by our friend Sharon, for a  dinner on her deck with a view of the bayou. A charming place, where you could imagine  being in the rain forest, while you are actually in Houston,  not far from Interstate 10 (one of the widest urban highways of the USA!).

I had offered to bring a “quiche”, and as often, I invented a recipe based on whatever was available in my refrigerator and cupboard. Well… I don’t just throw everything in and hope for the best,  I do pay attention to the flavors and try to imagine which ones can complement each other harmoniously. All the dinner guests (i.e. : Laurent, Sharon and her sister Dodie, a 90 year old painter, surprising of modernity, who had just published that day her first status on Facebook! ) enjoyed the tart and said I should publish the recipe. 

INGREDIENTS:
1 olive oil crust – click here
Onion jam  – click here
Spinach (approximately 1 bag of fresh spinach)
a small handful of crushed hazelnuts
2-3 slices of optional prosciutto ham (optional)
grated Parmesan cheese (quantity according to your taste!)
2 eggs
1 tsp cornstarch
1/2 cup milk + 2 TBs
olive oil
salt, pepper, nutmeg

DIRECTIONS:
Preheat the oven to 200 C – 400F.
In a frying pan, with a dash of olive oil, cook the spinach until wilted. Add salt, pepper, sprinkle a bit of grated nutmeg. (You will have to have enough cooked spinach to be able to cover generously the pastry base.)
Make a slurry with the cornstarch and 2 TBs of milk.
In a large bowl, beat the eggs, add the cornstarch + milk, the rest of the milk, gated Parmesan cheese, salt, pepper. Mix well. Add spinach cooked to the egg preparation.
Roll the dough and place it in the pie dish. Make holes in the bottom of the crust with a fork.
Spread a thin layer of onion jam on the crust.
Arrange small pieces of prosciutto on top of the onion jam.
Spread the spinach mixture over the prosciutto.
Sprinkle pieces of crushed hazelnuts (do not add too much hazelnut, as the taste is pretty powerful)
Bake in the oven for approximately 25-30 min.
