Texas Chili

Quand il fait un froid de canard, un bon vieux chili, ça ne se refuse pas. Et quand la météo est au beau, ce n’est pas mal non plus! La recette vient du livre “Cowgirl Chef, Texas cooking with a French accent” d’Elise Pierce, une Texane expatriée à Paris. (Merci à Temara qui a eu l’excellente idée d’offrir ce livre à Laurent).

J’ai à peine modifié la recette, un peu moins de piment, car la V.O. ne plairait pas à tous les palais Français, et adapté le mode de cuisson, pour une version rapide à la cocotte minute.

Accompagné d’un Cabernet Sauvignon Chilien, un bien bon repas…

INGREDIENTS: pour 3-4 personnes
Huile
1/2 oignon Texan (= 1 oignon français), émincé
250g de dinde hâchée (pour une version santé!) ou de boeuf hâché (pour une version plus traditionnelle)
1/4 poivron vert, en petits cubes
1/8 poivron rouge, en petits cubes
1 boîte (400g) de haricots noirs ou de haricots rouges, ou un mélange des deux, égouttés et rincés
1 boîte de tomates en dés
2 CàS de concentré de tomate, ou 1/2 boîte de sauce tomate
1/2 à 1 CàS de poudre de piment
1/2 càc de poivre de Cayenne
1/2 các de cumin
1/2 càc d’origan séché
1/4 càc de paprika fumé (La première fois, j’ai utilisé du paprika doux, c’est bien aussi!)
1/2 càc de sel
120 ml d’eau

INSTRUCTIONS:
Mettez de l’huile dans une cocotte et ajoutez les oignons et l’ail. Faites revenir quelques minutes à feu moyen jusqu’à ce que les oignons deviennent transparents. Ajoutez la viande hachée et cuire jusqu’à ce que la viande soit dorée (pour le boeuf) ou bien cuite (pour la dinde).
Ajoutez les poivrons, les haricots, les tomates, le concentré de tomate, les épices, le sel et l’eau.
a) Si vous avez une cocotte minute: à rotation de la soupape, baissez le feu et laissez cuire 18 min. Retirez du feu et faites sortir la vapeur.
b) Si vous n’avez pas de cocotte, laissez mijoter le plat à feu doux pendant environ 2 heures.

Dans les 2 cas, vous pouvez préparer ce plat à l’avance et il n’y aura plus qu’à réchauffer quelques minutes juste avant de servir, très pratique :+)

When it gets chilly outside, don’t you crave for a good old chili? (Wow, I am playing with words!).
My dear Texas friends, I hope you will approve of this recipe. It comes from the book “Cowgirl Chef, Texas cooking with a French accent” by Elise Pierce, a Texas lady who now lives in Paris, so it is supposed to be authentic :+)

I have to admit, I slightly modified the recipe, as it would have been far too spicy for most French people, and I used a pressure cooker to make it in time for dinner.
With a Cabernet-Sauvignon from Chile, a very enjoyable dinner…

INGREDIENTS: 3-4 servings
vegetable oil
1/2 onion, minced
9 oz ground turkey, for a healthier dish  (or ground beef, for a more traditional alternative)
1/4 green bell pepper, diced
1/8 red bell pepper, diced
1 can (14.5 oz – 400g) black beans or kidney beans, or a mix of both, drained and rinsed
1 can (14.5 oz – 400g) of diced tomatoes
2 Tbs tomato paste, or 1/2 can tomato sauce
1/2 to 1 TbS chili powder
1/2 Tsp cayenne pepper
1/2 Tsp cumin
1/2 Tsp dried oregano
1/4 Tsp smokey Spanish paprika (The first time I made this recipe,  I didn’t have any, so I used sweet paprika, and it works pretty well)
1/2 Tsp salt
1/2 cup water

DIRECTIONS:
Put the vegetable oil in a heavy, deep stockpot and add the onions and garlic. Turn the heat to medium-low and cook until the onion become translucent, just a few minutes. Stir in the ground beef (or turkey) and cook until browned (if you are using beef). or until it’s cooked through and no longer pink, (if you are using turkey).
Toss in your red and green bell peppers, beans, tomatoes, tomato paste, spices, salt and water.
a) If you have a pressure cooker: when the pressure cooker valve starts to rotate, lower the heat and cook for 18min. Remove from heat, and let the pressure go down.
b) If you use a conventional stockpot, turn the heat down to lowland cook for a couple of hours.

What makes this dish very convenient is, you can cook it in advance and just have to re-heat for a few minutes at dinnertime :+)
