Palets d’omelette aux courgettes, oignon et menthe – Tiny omelettes with zucchini, onions and mint

Il y a quelques semaines, nous avons reçu Peggy et Bob, nos sympathiques propriétaires pour un petit brunch dans le jardin. Parmi les assiettes servies, il y avait en particulier deux recettes que je testai pour la première fois ce jour-là et qui méritent d’être partagées:
Pour commencer, des petits palets d’omelette à la courgette et aux herbes. Vous allez devoir patienter jusqu’à la semaine prochaine pour la recette des mini-bruschetta de panais sur pain au levain… (En attendant, vous pouvez retrouver la recette du “Taboulé de chou-fleur” ici.)

INGREDIENTS (16 palets environ)
4 oeufs
50g de fromage râpé (Emmenthal ou comté)
150g d’oignons
150g de courgettes
2 CàS d’huile d’olive
1 CàS de lait
Sel, poivre
Feuilles de menthe fraîche (ou ciboulette, ou persil, selon ce que vous aimez ou ce qui est disponible dans votre jardin…)

INSTRUCTIONS:
Préchauffez le four à 180C/360F
Détaillez finement les oignons en petits cubes et faites les fondre dans une poêle avec de l’huile d’olive jusqu’à ce qu’ils soient légèrement colorés.
Lavez et râpez les courgettes (avec leur peau si elles sont bio) et ajoutez-les dans la poêle. Faites cuire une dizaine de minutes en remuant, jusqu’à obtenir un mélange assez sec. Laissez tiédir.
Battez les oeufs en omelette dans un saladier. Salez, Poivrez. ajoutez le lait, la menthe ciselée, le fromage râpé et le mélange courgettes-oignons. Mélangez bien.
Versez la préparation dans des petits moules individuels (j’ai utilisé des moules à muffins en silicone, que j’ai remplis à mi-hauteur) et enfournez pour environ 10 minute (le temps de cuisson sera à adapter en fonction des moules choisis et de l’épaisseur d’omelette versée dans chaque moule.)
Démoulez.
Vous pouvez déguster chaud, tiède ou froid, selon vos envies ou selon la saison!


A few weeks ago, we invited Peggy and Bob (our delightful landlords) for a Sunday brunch in our backyard. Among the plates served, there were in particular two recipes which I tested for the first time that day and which deserve to be shared:
The first one is a recipe for tiny omelets with zucchini, onions and herbs.
Be patient, and in the next few days I will publish the second recipe:  mini-bruschetta of parsnips on sourdough bread.

INGREDIENTS (about 16 pieces)
4 eggs
2 oz grated cheese (preferably Swiss cheese or Comté)
5 oz onions, diced
5 oz zucchinis
2 TbS of olive oil
1 TbS of milk
Salt, pepper to taste
Fresh mint leaves (or chives, or parsley, depending on what you like or what is available in your garden …)

DIRECTIONS:
Preheat oven to 360F / 180C
Cook the onions in a frying pan with olive oil until they are lightly colored.
Wash and grate the zucchinis (no need to peel them if they are organic) and add them to the pan. Cook for about ten minutes, stirring until a dry mixture is obtained. Let cool.
Beat the eggs in an omelet in a bowl. Add milk, chopped mint, grated cheese and the zucchini-onion mixture. Season with salt and pepper. Mix well.
Pour the preparation into small individual tart pans or muffin pans (I used silicone muffin pans, which I filled at mid-height) and bake for about 10 minutes (the cooking time will have to be adapted according to  the thickness of omelette poured into each pan.)
Turn the omelets out of the pan onto a serving dish.
You can enjoy those omelets hot, warm or cold, according to your taste or the season!
