Soupe aux lentilles corail et tomate – Red lentils and tomato soup

Hier soir, je me suis fait un petit plaisir, un petit plat pour moi toute seule: des choux de Bruxelles rôtis et caramélisés au vinaigre balsamique. Miam… Et oui,  mari et enfant ne veulent pas manger de choux de Bruxelles (d’ailleurs je ne publierai même pas la recette, car j’ai l’impression d’être la seule à aimer ça!).
Du coup, il fallait que je trouve une idée rapide pour nourrir le reste de la  famille avec ce qui traînait au fond du placard. Féculents interdits car les 3 derniers repas de mon fils étaient: sandwich, pizza et pâtes!
D’où l’idée d’une soupe à la cocotte minute (désolée pour Frédérique  qui rêve de recettes estivales…).

INGREDIENTS (pour 3 personnes):

  • 100g de lentilles corail
  • 200g de sauce tomate nature (1/2 boîte)
  • 1 oignon
  • 1/2 à 1 càc de poudre de cumin
  • 1/2 càc de poudre de coriandre
  • bouillon de légumes ou de poulet (50cl)
  • olive oil

METHODE:
Chauffez 1 ou 2 CàS d’huile dans une cocotte ou une cocotte-minute. Faites revenir l’oignon détaillé en petits cubes jusqu’à ce qu’il soit transparent. Ajoutez la sauce tomate, les épices (plus ou moins, selon votre goût – j’ai mis 1 càc de cumin et mon fils a trouvé que c’était un peu trop parfumé…), le bouillon, les lentilles.
Si vous utilisez une cocotte-minute, mettez-la sous pression et cuisez 10 minutes à partir de la rotation de la soupape.
Si vous utilisez une simple cocotte, portez à ébullition, couvrez partiellement et mijotez à feu doux une trentaine de minutes.
Mixez la soupe en un velouté, à l’aide d’un mixeur plongeant ou un blender.

Yesterday evening, I indulged myself with Brussel sprouts, roasted and caramelized with balsamic vinegar . The dish was just for me, because my husband and child do not want to eat Brussel sprouts (anyway, I have the feeling that I am the only one to like them, so don’t worry,  I will not publish the recipe. )
As a result, I had to find an idea for a dish that would be quick to prepare to feed the rest of the family . The previous 3 meals my son ate consisted in sandwich, pizza and orzo pasta, so there was no way I was going to cook rice or potatoes!
This is when a soup comes handy, especially if you have a pressure-cooker (and sorry for Frédérique who dreams about light and cool summer recipes….)

INGREDIENTS (3 servings):

  • 4 Oz red lentils (app. 1/2 cup + 1/4 cup)
  • 7.5 Oz tomato sauce (1/2 can)
  • 1 onion
  • 1/2 to 1 tsp of ground cumin
  • 1/2 tsp of ground coriander
  • 1/2 qt chicken stock (or vegetable stock)
  • olive oil

DIRECTIONS:

Heat 1 TbS of oil in a pot or a pressure-cooker. Cook the onion detailed in small cubes until it is soft and transparent. Add the tomato sauce, the spices (more or less, according to your taste – I did use put 1 tsp of cumin and my son said that the taste was too strong…), the stock, the lentils.
If you use a pressure-cooker, put it under pressure and cook for 10 minutes after the rotation of the valve.
If you use a simple pot, bring to a boil, then cover partially and simmer over a low heat for around thirty minutes.
Mix the soup with a plunging mixer or a blender.

  • Please do publish your brussel sprout recipe. I love them and they are so healthy but all I do is roast them with a spritz of olive oil. Yours sound better.

    • I like it when you beg for my recipe! Ok, I will do at some point… (problem is, I tried to take a photo of the dish but it didn’t look great at all!)
