Je sais, proposer une recette d’alcool fort sur un site de cuisine santé, c’est un peu à côté de la plaque. Mais bon… quand les citrons sont du jardin (pas le mien, celui de Stéphanie), et qu’on utilise un sucre de canne bio, c’est tout de même mieux qu’un alcool industriel, non? Le tout étant de consommer AVEC MODERATION!

Alors voilà la recette, tout spécialement pour Véronique (qui doit de son côté me faire goûter son punch gingembre…)

INGREDIENTS:

  • 50cl d’alcool à 95°  (190 Proof, comme on dit ici. J’ai acheté la marque “Everclear”, chez Specs)
  • 3-4 citrons du jardin non traités
  • 50cl d’eau
  • 500g de sucre de canne bio
METHODE:
  •  Lavez les citrons et épluchez-les avec un économe pour en récupérer  le zeste. Essayez de ne pas avoir de partie blanche (astuce: je gratte ensuite l’intérieur de l’écorce avec une petite cuillère pour la retirer).
  • Déposez les écorces dans un gros bocal et versez-y l’alcool.
  •  Laissez macérer au réfrigérateur pendant au moins dix jours (cette année j’ai attendu entre 2 et 3 semaines… patiente, patience…).
  •  Après ce temps de macération, préparez un sirop de sucre: portez à ébullition l’eau avec le sucre pendant 10 min, en mélangeant constamment (ou presque) avec une cuillère en bois.  Laissez refroidir le sirop, puis versez le sirop dans le bocal contenant l’alcool avec les zestes.
  • Laissez infuser 48 heures au réfrigérateur, puis retirez les zestes et filtrez dans un chinois.
  • Versez le limoncello dans des bouteilles propres et conservez au réfrigérateur.
  • Dégustez bien froid.
  • NB: Excellent pour finir la soirée sur la terrasse un soir de printemps avec vos copines!

I know , it is a bit weird to post a strong alcohol recipe on a healthy cooking site ! But … when the lemons come from the garden (not mine, Stephanie’s ) , when the sweetener is a nice organic cane sugar, it is so much better than any industrial alcoholic drink, right? The whole thing is to drink WITH MODERATION !

So here’s the recipe, dedicated to Véronique ( who shall in turn have me taste her ginger punch … )

INGREDIENTS:

  • 50cl of 90 ° alcohol ( in Houston : I used the brand ” Everclear ”  that I purchased from Specs)
  • 3-4 lemons, untreated
  • 2 Cups (50cl) water
  • 17 Oz (500g) of organic cane sugar

DIRECTIONS:

  • Wash the lemons and peel them with a paring knife to get the zest . Try not to have any white part (tip: to remove the white part, I scratched the inside of the peel with a small spoon).
  • Place the zests in a large jar and pour the alcohol in.
  • Let stand in the refrigerator for at least ten days (this year I waited between 2 and 3 weeks … patience, patience … ) .
  • After this waiting time, prepare a sugar syrup : boil water with sugar for 10 minutes , stirring (almost) constantly with a wooden spoon. Let the syrup cool, then pour the syrup into the jar containing the alcohol with zest.
  • Let infuse 48 hours in the refrigerator, then remove the zest and filter.
  • Pour the limoncello into clean bottles and refrigerate.
  • Enjoy chilled.
  • Note:  Perfect drink to enjoy on your patio,  a warm spring evening with your girlfriends !

  • J’ai eu la chance de goûter le limoncello fait par le maître!…
    Je fais pousser depuis un citronnier dans le jardin… Il a eu des soucis avec l’hiver de deux jours texan en sus des bestioles diverses qui l’ont attaqué (écureuils, insectes, opossums…)
    J’attends la prochaine apparition de citrons bio non cirés en supermarchés pour me lancer sinon je vais devoir attendre trop longtemps….
